Kingfish do not get the respect they deserve. They are treated like step cousins in the worlds big fish tank, along with barracuda, and a few others that come to mind. I believe that it is partly ignorance, and more likely incompetence in the kitchen, that sometimes causes people to not get excited about cooking or eating this rewarding piece of protein. This time of year up and down the Gulf and East Coast, you can see king mackerel, or kingfish (scomberomorous cavalla), leaping high into the air as if dancing for you, and teasing you to “come and get me”. Biologists say this has something to do with their mating ritual. And leap they do, often straight up and as high as eight to ten feet in the air. It is quite an awesome sight! Caught or bought fresh, kept on ice, and NEVER freezing this meat, will yield one of the tastiest fish dishes you will have wrapped your lips around in a while. Kingfish need to be cooked gently, and the mistake most often made in the kitchen is OVERCOOKING. Leaving this fish too long on the heat is what moves it from “immediate family” to STEPCOUSIN status instantaneously! The kitchen is really excited about one of our specials tonight at Ripe. We will be featuring “Roasted Kingfish Steak with an Herb-Butter Sauce”. We pledge not to overcook, and further suggest you wear your helmet tonight, cause one taste is gonna launch you out of your seat and propel you to the moon!
