Ackee & Crabmeat Clafouti

Clafouti [klah-foo-tee] is a custard-like baked French 
dessert that uses a batter similar to pancakes, and 
traditionally has cherries as the main filling.  
 
Originating in Limouisin, France, it quickly gained 
recognition and spread throughout the country, and all of 
Europe to become a very simple, yet elegant and flavorful 
dessert item. Think of it almost like a sweet omelet or 
frittata.  
 
Clafouti lost a bit of its popularity in the world of new 
and complex preparations of the late 20th century, but is 
now making a comeback, more as a savory treat, rather than 
a dessert, in current culinary circles. 
 
So take away the sugar and fruit, add some spinach, ackee 
(I know, its technically a fruit), and fresh Maryland 
Crabmeat, a hint of spice, and you have Clafouti, 
[clah-foot-seeh] (Jamaican pronunciation) re-invented,  
Ripe Island Style!  
 
Just think of it as a crustless quiche.  
 
This delicious recipe will be on our menu for this weekend 
only, and it’s a must try.  
 
It is drizzled with a spicy mayonnaise and served warm as 
an appetizer.
