I know we have been harping on this Fish business for some
time now. But we can’t stress enough just HOW fresh these
fish are that are coming in from Trinidad. As we
explained, these are called “Dayboat” fish at the Fulton
fish market, in that, as soon as the fishermen reach to the
shore in Trinidad, the fish are packed and shipped the SAME
DAY, OVERNIGHT, and in the market by the VERY NEXT DAY! It
is not often that we get a hold of fish of this quality,
and we have been having an incredibly long run on them, so
we keep grabbing up as much as we can to serve to you at
our table, courtesy of Mike & Geo, our fish guys from the
market!
What better way to celebrate your Caribbean heritage, or
